Poh Yuen Chan, the makers of Kicap Cap Gajah, was founded by Lee Gai in 1935. Gai grew up in the Guangzhou province in mainland China, where life was tough in the early 1900's. In 1912, carrying just a sack with all his belongings, he set off by sea to explore new opportunities in Malaya and Indonesia.
During his journey across the lands, Gai took up multiple jobs to make ends meet. Amongst them, there was one that truly inspired him - the art of making soy sauce.
After years of apprenticeships, Gai's ventures led him to the small town of Kuala Krai in Kelantan, which he fell in love with immediately. In the early 1920's he realized his passion and started his own soy sauce factory. With access to fresh air, natural water and premium ingredients on his side, Gai formulated his own brand of soy sauce, Kicap Cap Gajah, specially catered to the taste of the local palate.
Soon Kicap Cap Gajah became a hit, and in the year 1935 he registered the trade mark officially. The business expanded regionally, eventually relocating to the capital Kota Bharu, spearheaded by his son Lee Koon Chong. Today, Koon Chong is joined by his son, making this the 3rd generation in the family-run business.
The secret to our soy sauce is simple - we use quality ingredients and follow authentic, traditional methods. Imported soya beans are cleansed, cooked and mixed with specific amounts of yeast and wheat flour. This special paste is then brewed with salt and water, then sealed and left to ferment using a slow-fermentation method which takes months. When the mixture is finally ready, the soy sauce is extracted, filtered, pasteurized, and bottled.
Our sauces are made in small batches at a time to allow for care and quality. Till today, our production line still follows the traditional way.
Poh Yuen Chan started as a cottage industry with a very small production capacity. As demand grew, we selectively introduced new technology whilst maintaining traditional production methods.
We choose to run a semi-automated production line, assisted by state-of-the-art tools and processing equipment. We ensure quality by having rotary bean cooking equipment and temperature and humidity controlled culturing rooms. We ensure hygiene by introducing high-pressure cookers and pasteurizing machines. And we increase efficiency by using automated filling machines and high-speed packaging.
In short, we ensure our products are clean, efficient, and true to the original recipe.
By the early 1990's, distribution of Kicap Cap Gajah covered the whole of Kelantan, and parts of its neighbouring states, Terengganu and Golok in Thailand. Today, Poh Yuen Chan has its own distribution network within Kelantan, and through its affiliates cover more than 2,000 outlets throughout the nation.
